Step 1
First of all, determine what your scanner is capable of. Most modern scanners are equipped with a text recognition function, but it is still better to make sure that the purchased scanner really can do this. The complete software package for this device will probably be included with the scanner, including the one that is necessary for OCR, but very often these programs do not do their job well. So go to the second step.

Download ABBYY FineReader. This is one of the most popular and high quality OCR software.

Break the text recognition process into several stages: text scanning, markup, recognition, saving. Instead, you can use the OCR wizard, but only if your original text is of very high quality, and the structure of the text is extremely simple.
Step 4
Begin the process of scanning the text. Choose the highest quality copy of a document if you have several. Expand the sheets if they are bound in the same folder or in some other way. If this is not possible without losing any important data, then don't do it. Press your text firmly against the scanner glass. Use additional weight if necessary. Arrange the text as evenly as possible on the glass.

Now use the function "Clear image from debris". If the image is not rotated as you want, then rotate it correctly.

Manually select blocks of text, indicate where the text is on the image, where is the picture, where is the table. This will make the program easier and faster.

If your text contains a table, then select it and use the item "Analysis of the table structure". Manually adjust the position of the grid table.

Now click on the "Recognize All" button and wait for the result.

Check the spelling of the text, manually or using Microsoft Word. Save the results of your work in the format you need.
