The technique of highlighting any color detail in a black and white photograph was most likely used in the days of black and white cameras. Then in the photo they painted the desired element with colored pencils. Now this effect can be achieved in a few simple steps using Adobe Photoshop.

Step 1
There are several ways to get this result. The simplest of these is deletion. Create a copy of the image, for this click in the "Layers" tab on the photo with the right mouse button and select "Duplicate layer". Then make this copy black and white - in the main panel, choose Image → Adjustments → Black and White or Desaturate. You can use the key combination Shift + Ctrl + U.
Step 2
After that use the Eraser tool (left toolbar). Adjust the size and hardness of the brush. A color image should appear where you slide it over the black and white image. Ideally, there should be one color element, then the photo will look stylish. But in some cases, the selection of several objects is allowed, the main thing is that there are not too many colored spots. Remember that you are making a contrasting accent.
Step 3
Another way is to work with a specific color. Duplicate the layer in the same way as in the first case. On the active copy of the layer, go to Selection → Color Range. In the window that opens, click on the color swatch (Eyedropper tool) and drag the sliders left and right until you achieve the desired result. The main background should be black, and the color you want should be white.
Step 4
Below the layers, click the "Create Layer Mask" button - this will allow you to work on a specific area. Then go back to the original image layer and desaturate it (Shift + Ctrl + U). If after desaturation, in addition to the desired detail, extra areas remain colored, click on the layer with the mask and, using the "Eraser", erase unnecessary fragments.
